Mexican Beef
Ingredients:
- 1 Tbs Olive Oil
- 1 Medium Brown Onion
- 2 cloves Garlic
- 1 Kg Minced Beef
- 400 gr can Crushed Tomatoes
- 1 cup (250 mls) Beef Stock
- 3/4 cup (180 mls) Tomato Paste
- 425 gr can Mexican Style Baked Beans
- 2 Tbs fresh chives
Instructions:
- Combine oil, onion and garlic in a large microwave safe dish; cook
uncovered, on high (100%) 4 minutes, stirring once during cooking.
- Stir in beef; cook,uncovered,on high (100%) 10 minutes, stirring
twice. Add undraned tomatoes, stock and paste. Cook, uncovered, on
high (100%) about 25 minutes or until thick, stirring twice.
- Stir in baked beans; cook uncovered on high (100%) 2 minutes. Stir
in chives.
