Mexican Beef

Ingredients:

  • 1 Tbs Olive Oil
  • 1 Medium Brown Onion
  • 2 cloves Garlic
  • 1 Kg Minced Beef
  • 400 gr can Crushed Tomatoes
  • 1 cup (250 mls) Beef Stock
  • 3/4 cup (180 mls) Tomato Paste
  • 425 gr can Mexican Style Baked Beans
  • 2 Tbs fresh chives


Instructions:

  • Combine oil, onion and garlic in a large microwave safe dish; cook uncovered, on high (100%) 4 minutes, stirring once during cooking.
  • Stir in beef; cook,uncovered,on high (100%) 10 minutes, stirring twice. Add undraned tomatoes, stock and paste. Cook, uncovered, on high (100%) about 25 minutes or until thick, stirring twice.
  • Stir in baked beans; cook uncovered on high (100%) 2 minutes. Stir in chives.
