Lemon Butter Biscuits

Ingredients:

  • 125g butter, room temperature and cubed
  • 80g white sugar
  • 15g self-rising flour
  • 100g plain flour
  • 2 TBS lemon juice.
  • 1 tsp lemon zest

Instructions:

  • Rub butter into flour until it resembles bread crumbs.
  • Add sugar and juice and by hand to make a firm biscuit dough.
  • Roll into one inch balls and place on a slide.
  • Bake at 180'C for 8-14 minutes or until golden brown.
