Ingredients:
- 125g butter, room temperature and cubed
- 80g white sugar
- 15g self-rising flour
- 100g plain flour
- 2 TBS lemon juice.
- 1 tsp lemon zest
Instructions:
- Rub butter into flour until it resembles bread crumbs.
- Add sugar and juice and by hand to make a firm biscuit dough.
- Roll into one inch balls and place on a slide.
- Bake at 180'C for 8-14 minutes or until golden brown.
