Chocolate Marshmallow Mousse

Ingredients:

  • 1 TBS Brandy
  • 250 g Chocolate Chips
  • 2 Egg Yolks
  • 100 g Butter, melte
  • 2 Egg Whites
  • 100 g White Sugar

Instructions:

  • Melt chocolate in a double boiler.
  • Set aside to cool slightly.
  • Whip egg whites until stiff peaks form.
  • Showly add sugar while mixing.
  • Set aside.
  • Fold egg yolks into melted chocolate.
  • Fold in butter until smooth.
  • Pour in egg whites with chocolate.
  • Mix in brandy if desired.
  • Pour into ramikens and cover surface with cling wrap
    • To avoid a scum forming while setting.
  • Refrigerate until firm.
