Chocolate Marshmallow Mousse
Ingredients:
- 1 TBS Brandy
- 250 g Chocolate Chips
- 2 Egg Yolks
- 100 g Butter, melte
- 2 Egg Whites
- 100 g White Sugar
Instructions:
- Melt chocolate in a double boiler.
- Set aside to cool slightly.
- Whip egg whites until stiff peaks form.
- Showly add sugar while mixing.
- Set aside.
- Fold egg yolks into melted chocolate.
- Fold in butter until smooth.
- Pour in egg whites with chocolate.
- Mix in brandy if desired.
- Pour into ramikens and cover surface with cling wrap
- To avoid a scum forming while setting.
- Refrigerate until firm.
